4 Sneaky Ways to Eat More Vegetables at Breakfast

I think most people know they need to eat more fruits and vegetables but how is the challenge. Many of my adult patients who refuse to eat vegetables were forced to eat them as a kid. They were usually served vegetables from a can and couldn't leave the table until their plate was cleared. Who wants to eat salty, soggy green canned green beans? Not me. The only way to eat more vegetables is to find ways to make them more fun and delicious!


Sweet Potato Toast: This sweet potato toast is so clever! Instead of using bread as toast, use sliced sweet potatoes. These keep for a few days in the refrigerator and can be warmed up in the toaster like a traditional slice of toast. The possibilities are endless but I think sauteed black beans and onion with Tex-Mex spices would be a real treat.


Breakfast Salad: Hear me out, I think breakfast salads are a great way to combine some traditional breakfast ingredients (eggs, fruit, cheese) with some untraditional ingredients (greens, salad dressing). To meal prep, poach or hard boil eggs and slice fruit and cheese. I suggest an arugula salad with poached eggs, sliced strawberries, goat cheese and balsamic vinaigrette. Most salads would be a great option, just make sure it has some protein, complex carbohydrates and healthy fats.


Smoky White Bean Shakshuka: Originating from North Africa, Shakshuka is one of my favorite recipes of all time. The ingredients are simple- tomatoes, onions, spices and eggs but the outcome is incredible. I love the versatility of this recipe, I use what I have on hand. I don't recommend leaving out the smoked paprika and cumin because these really elevate the dish. For meal prep, make the tomato base ahead of time and cook the eggs the same day as serving.



Smoothies: Smoothies are an excellent way to include more vegetables at breakfast. I recommend including mild greens like spinach or kale, fruit (preferably berries for the high antioxidant content) and a protein (protein powder, Greek yogurt or milk). I promise you can't even taste the spinach and you'll have a head start on your veggie intake for the day.
